Poivres de madagascar - poivre noir - poivre blanc - poivre sauvage voatsiperifery

Our peppers

Les Délices de Mada invites you to discover three peppers from Madagascar

Wild pepper, pepper with an exceptional fragrance!

The wild voatsiperifery pepper is harvested by hand in the primary forests of Madagascar. The lianas of the tree (Piper bobonense pepper tree) can measure up to 20 meters in height, so it is very difficult to harvest.

This rare and addictive pepper is very little known to the Malagasy population. Unlike black pepper, it does not sting, but its fragrance is very powerful: there are strong woody, floral and citrus notes.

"Voa" means fruit and "tsiperifery" means the plant. It is the only pepper in the world on the verge of extinction, due to the problems of deforestation in the country.

In the kitchen, this pepper can accompany all dishes. It can be added at the last moment to all your preparations: meat, poultry, fish, shellfish, steamed vegetables, dishes in sauce, marinades or fruity desserts.

No risk for the conservation of this pepper. You can store it in any tightly closed container.

Black pepper, a pepper that does not lack spiciness!

It is the best known and the most powerful of our peppers, it warms the palate. It hides woody and fruity notes.

It can be added at the last moment to all your preparations: meat, poultry, fish, steamed vegetables, dishes in sauce or marinades.

White pepper, appreciated by all!

White pepper comes from the same tree as black pepper. The grains are harvested when ripe and then plunged into a basin of rainwater to rid them of their envelopes and uncover their white hearts. They are then dried for several days in the sun.

It is the most subtle of our peppers and the sweetest (it does not sting). He knows how to spice up all your dishes while going unnoticed. Ideal for introducing children to spices (in pasta or potato dishes)

Peppers and health

Pepper has many virtues for the body. It contains different substances that have a positive effect on health:

  • it produces piperine which stimulates the secretion of gastric juices, improving digestion and stimulating the appetite;
  • It acts on the respiratory tract, which is why it is very useful against winter illnesses: bronchitis, laryngitis or colds;
  • It can effectively reduce headaches, joint and muscle pain:
  • It helps to improve digestion, which is why it is advisable to take it in case of nausea, bloating, constipation...

We advise you to grind it at the last moment to make the most of its benefits.
